Now settle down to explore the Schlosshotel’s slow-food table, starting with a breakfast buffet packed with regional treats including 350 cheeses made by the Gstreins of Roppen (members of the Guilde Internationale des Fromagers). Irresistible fresh bread from the village bakery, organic free-range eggs from a neighbouring farm, honey from the Kaunergrat Nature Park, fruit and vegetables from local suppliers whose names are synonymous with quality and sustainability: at Schlosshotel Fiss, 5-star slow food cuisine is the hallmark of every signature dish.
What’s the beef?
Schlosshotel Fiss’s new Beef Club steak restaurant celebrates authentic local tradition, in a contemporary Alpine setting complete with deer and chamois antlers on the wall – the perfect context for finest rib-eye, tomahawk and porterhouse steaks. The menu also features rare salt-marsh lamb. The hotel’s hip fine-dining hub is the Big Green Egg: from behind a glass partition, diners watch the kitchen team work its magic with this uber-barbecue, which is made from ceramic developed in conjunction with NASA. The miraculous utensil offers excellent insulation, heat reflection and precise temperature control, for maximum flavour and minimum energy consumption. A green egg in colour and character.
After a great day… the night begins with a gin
Raise a glass of the Schlosshotel’s own exciting creations, based on its SHF signature gin which is made in collaboration with the award-winning Maass distillery in Prutz. Local favourites include Pine Twist – woody Tyrolean pine flavour best served with Fever Tree Tonic Water; or Raspberry Twist – fruity and slightly bitter with a wild raspberry finish. Bartender Sam Lutz recommends the Strawberry Basil Daiquiri with home-made strawberry pulp and Thai basil and rosemary syrup; the Corn & Oil with home-made falernum syrup; and Black Widow Sour – perfect for hot summer evenings. Schlosshotel Fiss also makes a wide range of syrups and liqueurs based on elderflower, elderberry, cucumber, vanilla, coffee, cherry, blueberry and passion fruit, as well as lemonades, iced teas, ginger beer and tonic.
The SHF Signature Drinks and exclusives such as Dom Perignon Luminus, Diplomatico Ambassador or Nonino Antica Cuvée are served at the bar to an accompaniment of live music – or outside on the terrace under the stars. You choose.
